Ready, steady, flip! Pancake Day is the perfect excuse for family cooking, tasty toppings and stacks of fun. These pancakes use basic batter + food colouring to create a colourful stack kids will adore. You can use natural food colourings if you prefer.
Ingredients:
• 200g plain flour
• 2 tbsp sugar
• 2 tsp baking powder
• Pinch of salt
• 1 egg
• 250ml milk
• 2 tbsp melted butter or oil
• 1 tsp vanilla
• Gel food colouring (red, yellow, blue)
Method:
1. Mix dry: Flour, sugar, baking powder, salt.
2. Mix wet: Egg, milk, vanilla, melted butter.
3. Combine gently – small lumps are good.
4. Divide batter into 5–6 bowls.
5. Add colours: Red, Yellow, Blue, Orange (red + yellow), Green (yellow + blue), Purple (blue + red)
6. Cook: Pour small rounds into a lightly oiled pan on medium-low. Flip when bubbles appear.
7. Stack in rainbow order and serve!
Topping Ideas: Yogurt + berries, sliced fruit rainbow, light drizzle of honey or maple, peanut/seed butter swirl.
